Roasted Garlic Mashed Potatoes


ahhh the smell of roasted garlic is enough to make me weak in the knees.   buttery and slightly sweet, it's perfect when added to anything, and there is no arguing that i prefer it just simply spread on a warm toasted baguette.  
yesterday i jazzed up some mashed potatoes with this flavour powerhouse because you should always have as much garlic in your life as humanly possible. am i right?



Roasted Garlic Mashed Potatoes

ingredients:
1 head of roasted garlic {recipe follows}
2 1/2 lbs baby red & yellow potatoes {skins on}
1/2 cup heavy cream
1/4 cup butter
1/4 cup milk
salt & pepper
parsley for garnish

method:
bring potatoes to a low boil and cook until fork tender.  drain and mash adding, cream, butter, milk and garlic.  season to taste with salt and pepper and finish with parsley.




Roasted Garlic

ingredients:
1 head of garlic
1 tablespoon olive oil

method:
preheat oven to 325F.
cut the tip off of the garlic head so that the individual cloves are exposed.  place garlic clove side up on a large piece of aluminum foil.  drizzle with olive oil and wrap up tightly.
place foil wrapped garlic on a baking sheet and roast until soft and golden.  approximately 50-60 minutes.
