Classic Zucchini Loaf


it's officially fall.
 there is an undeniable chill in the air.
 so this morning as a accompaniment to my delicious mug of coffee {which i need to keep warm,} i thought it appropriate to make a homemade zucchini loaf.
simple.
classic.  

today's mid morning snack will make for tomorrows delicious french toast breakfast.  stay turned.

Classic Zucchini Loaf

ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 teaspoon cinnamon
2 eggs
1 1/4 cup sugar
1/2 cup melted butter, cooled
1/4 cup sour cream
1 1/2 teaspoons vanilla
1 cup grated zucchini, squeezed dry


method:
preheat oven to 350F.  spray 9x5-inch loaf pan with non-stick spray and set aside.
in large bowl combine the first five ingredients and whisk.
in separate bowl whisk together sugar, eggs, butter, sour cream and vanilla till smooth and blended.  fold in zucchini.
add wet ingredients to dry and mix until just incorporated, do not overmix. 
pour batter into prepared pan and bake for approximately 55-60 minutes or until toothpick inserted comes out clean.
allow to cool in pan for 20 minutes before removing to cool completely.
