Lemon, Basil & Garlic Baked Chicken


i seem to be clinging to a certain flavour profile this week.....lemon & basil.


citrus & fresh herbs get me everytime, and being the proud owner of garden fresh basil and a bag of lemons equivalent to what would seem the size of a beach ball, i can find no excuse not to put these two together.
last night i added in some garlic and olive oil, tossed in chicken and let the flavours marinade for the better part of the afternoon.  the result?  a deliciously moist and flavourful baked chicken dinner.

Lemon, Basil & Garlic Baked Chicken

ingredients:
4 skinless boneless chicken breasts
1 teaspoon lemon zest
1/4 cup fresh lemon juice
2 cloves garlic, minced
1/4 teaspoon salt
2 tablespoons olive oil
1/2 cup loosely packed fresh bail leaves, thinly chopped
pepper to taste

method:
preheat oven to 350F
in small bowl whisk together lemon zest, juice, garlic, salt, oil and basil leaves and pepper.
place chicken and marinade in a large resealable plastic bag and refrigerate for at least one hour to overnight.
remove chicken from marinade and place on baking sheet.
cook for 30-40 minutes depending on the size of the chicken or until cooked though.
transfer to serving plate and top with a slice of lemon and basil if desired.
