summer herb potato salad


the easiest way to boost flavour to a dish is with the addition of fresh herbs.  not only do the make the dish tastier & prettier, they are also pretty impressive on the health benefits front.


if you're lucky enough to have your own personal windowsill herb garden then you probably know all to well that those green little plants can be incorporated in so many ways and in so many dishes.

i decided to use mine, to make a light summer potato salad.  
chive and tarragon vinaigrette for a healthy potato salad side. #summerwin

summer herb potato salad

ingredients:
2 1/2 lbs baby red & yellow potatoes
1/4 cup white-wine vinegar
2 tablespoons extra-virgin olive oil
1 teaspoon honey
1 teaspoon salt
1/4 cup fresh chives, finely chopped
2 tablespoons fresh tarragon, finely chopped
fresh cracked pepper to taste

method:

place potatoes in a pot and cover with 2 inches of water.  bring to a boil;  reduce heat , and simmer until fork tender, 25 to 30 minutes.  drain.
wish vinegar and salt in a bowl.  add oil in a slow, steady stream, whisking until emulsified.  add herbs and pepper.
add warm potatoes to vinaigrette and toss.
