Avocado & Chickpea Wraps

a rainy spring {almost summer} sunday calls for a pick me up.
luckily for me pick-me-ups are synonymous with food.
food is synonymous with lunch.
and lunch should always include avocados. #fact

today it does.
this makes me happy.
avocados for the win.

Avocado & Chickpea Wraps

ingredients:
1 - 19oz can cooked chickpeas, drained & rinsed
1 1/2 - 2 avocados, ripe (depending on size)
juice from 1 lemon
2 tablespoons scallions, finely chopped
salt & pepper to taste

tortilla wraps for serving

optional topping: diced tomatoes, cucumbers, spinach.....etc.


method:
mash together chickpeas, avocado and lemon juice until desired texture is reached.  add in scallions and season to taste with salt and pepper.
divide mixture among tortillas, add desired toppings, wrap, and serve.
