Butternut Squash Fries

i have yet to meet a fry i didn't like.  
sweet potato, truffle, twice baked, parsnip, i could go on....

today i'm taking a healthy guilt-free approach, which only means now i can eat more, right?

Butternut Squash Fries

ingredients:
1 medium butternut squash, peeled & seeded
2 tablespoons extra virgin olive oil
sea salt & pepper

thyme or parsley for garnish
ketchup for serving


method:
preheat oven to 425F.
cut butternut squash into French fry shapes and toss in olive oil.  season to taste with salt and pepper.
place on baking sheet and cook for 40 minutes or until crisp, turning once halfway.
garnish with fresh herbs and serve with ketchup.
