saskatoon berry vinagriette


a perfect holiday monday spent picking saskatoon berries, means a perfect tuesday dinner courtesy those very same berries.


with pie being a must for some of the berries, other, healthier alternatives are also needed.  so last night i took those berries and transformed them into a vinaigrette used to top a salad made of greens, grilled chicken, saskatoon berries, red onions, goat cheese & cashews.


i'm a genius.



Saskatoon Berry & Balsamic Vinaigrette


Ingredients:
2/3 cup saskatoon berries
1 cup extra virgin olive oil
1/2 cup balsamic vinegar
4 Tbsp honey
2 tsp dijon mustard
sea salt & pepper

Method:
In saucepan bring berries, balsamic vinegar & honey to a boil, reduce heat and simmer for 5 minutes to soften berries.
Add to food processor or blender and stream in olive oil, mustard, and salt and pepper to taste.

store in an air-tight container in the fridge.

note: the consistency of this vinaigrette is thicker, feel free to thin it out with the addition of lemon juice or a little more olive oil.

mixed greens
grilled chicken breast
saskatoon berries
red onions, slivered finely
goat cheese, crumbled
cashews
saskatoon berry balsamic vinaigrette
