Saskatoon Berry & Banana Baked Oatmeal


the only thing i enjoy more than preparing meals from scratch, is doing so with ingredients i picked with my own two hands, or in this case, the hands of all my favourite people.
we spent the better part of yesterday morning enjoying the sunshine and countryside as we descended row upon row of saskatoon berry picking @ the farm

yesterdays labour = today's breakfast feast



now i have to figure out what to do with the remaining 10 cups of berries.....
oy.




Saskatoon Berry & Banana Baked Oatmeal


Ingredients:
3 Tbsp unsalted butter, melted and cooled slightly
2 cups old fashioned oats
1/3 cup brown sugar
1/4 cup unsweetened coconut
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
2 cups unsweetened vanilla almond milk
1 large egg
1 1/2 tsp vanilla
1 banana, mashed
1 banana, sliced
1 1/2 cups saskatoon berries

greek yogurt & sliced fruit for serving (optional)


Method:
Preheat oven to 375 degrees.  Spray an 8-inch square baking dish with non-stick spray.
Combine oats, sugar, coconut, baking powder, cinnamon, and salt in a bowl.  In a separate bowl, whisk milk, egg, mashed banana, 1 1/2 tablespoons butter, and vanilla.
Line bottom of prepared pan with sliced bananas and 1 1/4 cups of saskatoon berries.  Cover with oat mixture.  Slowly drizzle milk mixture over the oats.  Gently tap dish on work surface to distribute liquid.  Scatter with remaining saskatoon berries and drizzle with remaining butter.
Bake for 45-50 minutes, until top is nicely golden and oat mixture has set.  Allow to cool slightly.
Garnish with additional berries and bananas and serve with greek yogurt.

Serves: 4-6
