Vanilla Almond Chia Seed Pudding


i'm back on the healthy eating bandwagon.  seriously.


this past week and a half i was more than off, derailed more like it.  
if you follow me on instagram, you already know that the last 10 days yielded a pancake breakfast each & every morning, add to that the multiple birthday celebrations, the lemon meringue pie, patio drinks, and and and....

my body is begging for me to once again eat clean, move more, and fuel itself properly.  

consider it done. 

todays breakfast encompasses all that, chia seed pudding.  regarded a superfood this tiny seed has a wonderful nutritional profile and is the perfect start to my day, and week ahead.

  
it also helps that breakfast looks pretty too!

Vanilla Almond Chia Seed Pudding


Ingredients:
1/3 cup chia seeds
1 1/2 cups unsweetened vanilla almond milk
1-2 Tbsp honey
splash of vanilla
fresh berries

Method:
in medium bowl combine chia seeds and almond milk.  store in refrigerator for 30 minutes.  stir and place back in refrigerator for at least four hours, or overnight, covered.
add in vanilla and honey to taste.  top with fresh berries.

serves 2
