Coconut, Date & Pistachio Oatmeal


Judging by my last few posts, you could say I'm on a bit of a date fix as of late. 


First there were the squares, my favourite.
Then came bacon wrapped dates, another favourite
Third were the handfuls that I grabbed when I needed a sweet fix.


This morning we are taking a healthy date approach, keeping in mind that there are resolutions to be kept, and goals to be made.  

Coconut Date Oatmeal.  Perfection. 



Coconut, Date & Pistachio Oatmeal


Ingredients:
1/2 cup Quaker quick cooking oats
1 cup unsweetened vanilla almond milk (or coconut milk, or combination of the two)
4 dates,  pitted & chopped
2 Tbsp sweetened coconut
1 Tbsp pistachios, chopped 

Method:
In saucepan, heat milk until it reaches a boil.  Add in oats and dates (reserving a few for garnish).  Reduce heat and cook stirring constantly for 5-7 minutes, or until thickened.  Sir in half of sweetened coconut and remove from heat.
Pour into a bowl and garnish with remaining coconut, dates and pistachios, adding more milk if desired.
