Homemade Oreos: A Birthday Girls Request


Another November and it's once again time to celebrate a special little girls birthday.  My little girl's 4th birthday to be exact.  In fact this year it's her Champagne birthday (she turn's 4 on the 4th) so of course we will be toasting this day with sparkling grape juice as big girl would.


Last year R's dessert of choice was chocolate cupcakes & Oreo frosting.  This year, a whole 365 days older and wiser, she still wants chocolates and Oreos (in large quantities I might add.) She's consistent that one, at least when it comes to her love for chocolate.  Otherwise she changes direction like the wind.  I wonder who she gets that from...


Aside from presents and the aforementioned chocolate and sparkling juice, R was most excited about bringing birthday treats to share with her schoolmates and teachers (probably because this too included chocolate)
I figured rather than bake, frost and transport 20+ cupcakes, I would make homemade Oreo cookies instead.  This was an easy sell since they are the chocolate version of my birthday cake cookies, also they are delicious and way too addicting. #winning

Homemade Oreos


Ingredients:
Cookie Recipe
1 pkg Devil's Food Cake Mix
2 large eggs
1/2 cup oil

vanilla buttercream icing
1/2 cup unsalted butter, room temperature
3 cups sifted confectioners' sugar
1 1/2 tsp vanilla extract
splash of milk

Method:
Preheat oven to 350F.  Line cookie sheet with silpat mat or parchment paper.  Set aside.
In large bowl, combine oil, eggs, and cake mix, blend together using a wooden spoon.
Roll dough into quarter sized balls onto prepared cookies sheets.  Flatten a little.
Bake for 7-8 minutes.  Remove from oven and allow to cool for 2-3 minutes, before transferring to wire rack.
Meanwhile to prepare filling.  Cream butter.  Add in vanilla extract, and confectioners' sugar slowly.  Add in a splash of milk until you reach desired consistency.
To assemble:  Add approximately 1 tablespoon of filling in the bottom centre of one cookie.  Place another cookie similar in size on top.  Lightly press together, to work the filling evenly to the outsides of the cookie.  Continue process until all cookies have been sandwiched.
