Perfect Hard Boiled Eggs

The age old question asks, "what came first, the chicken or the egg?"  My response.  Meh, as long as we have eggs & chicken, does it really matter? 
In our house we are big 'egg people.'  Time of day irrelevant.  Breakfast, lunch, dinner, snack, whenever, however.  They are an inexpensive and tasty way to get some much needed protein in our diets.  Plus there are so many options when it comes to eating them.  Poached, scrambled, baked, frittatas, in a hash, in a cake, in meringue.  Yes, I said cake and meringue, don't seem shocked by this, I love sweets!

My two favourite ways to consume:
  • Poached - yummy, drippy, dip your toast in it good
  • Hard Boiled - salads, sandwiches, straight up 
The nice thing about hard boiled eggs, is that you can make a bunch at once and store them in an air-tight container in the fridge.  Perfect for a quick snack or lunch on the go.  Get cracking people.

Hard Boiled Eggs

Ingredients:
Eggs
Water

Method:
Place eggs in a single layer in a large saucepan, and cover with water by 1 inch.  Bring to boil.  Remove pan from heat, cover and let stand for 12 minutes.
Meanwhile create an ice bath in a large bowl.  Once the 12 minutes have passed, transfer eggs to cold water and allow to sit for 5 minutes.
