White Chocolate Almond Butter


Welcome December!  I'm sure most of you woke up this morning happier than usual. Perhaps, you even had a skip in your step.  December 1st means one thing.  It's advent calendar time!  Who doesn't want to begin the morning with a piece of chocolate.  Now, the hard part is always only having one.  No skipping ahead and eating future days worth people.  Instead, just buy 2 or 3 calendars and eat from all of them.  No judgement here.
An advent calendar is one way to get your chocolate fix @ breakfast.  The other?  A chocolate almond butter.  A white chocolate almond butter to be more specific.  I think I consume most of my white chocolate @ Christmas time.  Something about snow seems to bring on this craving.  Given the snow has fallen, it's time to cave in and let my taste buds win.   


White Chocolate Almond Butter

Ingredients:
2 cups almonds
1/2 cup white chocolate
1/2 tsp vanilla
1 tsp sunflower oil

Method:
Preheat oven to 300 degrees.  Line a cookie sheet with parchment paper and toast almonds for 20-25 minutes, turning once halfway.  Allow to cool slightly.
Place roasted almonds into a food processor and process for 10-12 minutes, stopping occasionally to scrape down sides of the bowl as needed.
Meanwhile melt chocolate in microwave in 30 second intervals, stirring in between.
Once almonds are smooth and creamy add in melted chocolate, vanilla and oil.  Process for another 2-3 minutes.
Store in an air-tight container in refrigerator.

**Almond butter will firm up a lot in the fridge due to the hardening of the chocolate.  Allow to sit at room temperature prior to use.
